Cooked the Lahore way
We cook the way Lahore cooks: over charcoal, in iron, fast and loud. The tandoor sits at the back of the kitchen like a glowing mouth of fire: naan goes onto its wall, kebabs go over the coals, and the smoke does half of the seasoning for us. Every karahi is cooked fresh in the iron wok when your order comes in, then packed hot and sealed, so it reaches you the way it left the flame, the tomatoes still catching at the edges, the gravy still bubbling when you lift the lid.
